Description

Masterwort is a smooth, perennial herbaceous plant growing about 2 to 3 feet (60–90 cm) tall. It features a stout, furrowed stem and dark green, glossy leaves divided into three main leaflets, each often further divided. The plant produces large, multi-rayed umbels of small white flowers, resembling those of Angelica.

The root is thick, aromatic, and notable for its strong fragrance similar to Angelica, with a pungent, spicy, warming taste that stimulates saliva and leaves lasting warmth in the mouth.


Constituents

The root contains a volatile oil made up of a hydrocarbon and an oxygenated compound, believed to be related to the aldehyde of angelic acid. It also imparts a distinctive flavor and is sometimes used for seasoning cheese and traditional liqueurs.
